Grilled Vegetable Marinade- Secret Behind Our Grilled Vegetable Recipe

Grilled Vegetable RecipeWho’s ready to get out and grill?  Today, I am sharing our Grilled Vegetable Recipe which includes our secret grilled vegetable marinade.

When the weather is beautiful outside, I love cooking outside on our grill.  Usually when you think about grilling, thick steaks, chicken and ribs come to your mind.   But I love fresh vegetables.  The Grilled Vegetable Marinade enhances the flavor of the vegetables.  And the vegetables still have a little crunch when you serve them.  So good!


Grilled Vegetable Recipe
These grilled vegetables are delicious. The vegetables are filled with flavor due to the Grilled Vegetable Marinade and they retain some of their wonderful crunch.

  • Vegetables of your choice- such as carrots, yellow squash, zucchini, eggplant, red bellpepper,etc. Choose approximately 8 pieces of the vegetables total.
  • Grilled Vegetable Marinade (see ingredients below)
  • ¾ c olive oil
  • ¼ c lemon juice
  • 1 Tbsp onion, finely chopped
  • ½ tsp garlic salt
  • ¼ tsp pepper
  • ¼ tsp thyme
  • ¼ tsp oregano
  • ¼ tsp paprika
  • ¼ tsp basil
  • 1 Tbsp Sherry
  • 1 tsp Worcestershire sauce
  1. Wash and cut the vegetables into large chunks.
  2. Combine all the ingredients for the marinade. Pour the marinade over the vegetables in a large bowl and stir until the marinade is covering the vegetables. Marinade for 1 hour.
  3. Place vegetables on a skewer or place in aluminum foil. Grill over medium coals for approximately 10 minutes. Serve immediately.
